Chocolate peanut butter oatmeal squares

I recommend freezing them so you don't eat them all the first day!


This is one of my favorite snacks and I always have a stash in the freezer. They freeze beautifully and defrost quickly so a great snack to always have on hand!

Almost ready!



Ingredients:

200 g (1 cup) vegan butter

85 g (1/2 cup) brown sugar

1 1/2 tsp vanilla extract

250 g (3 cups) gluten-free instant oats

135 g (1 1/2 standard bars) vegan chocolate

165 g (2/3 cup) peanut butter


Method:

1. Prepare a 9-inch square pan by lining with parchment paper

2. In a sauce pan, melt butter and sugar over medium heat until sugar is dissolved. Stir in vanilla then add oats and cook for 2-3 minutes until mixture comes together

3. Poor two thirds of the oat mixture in the prepared pan and press down evenly

4. Melt chocolate and peanut butter in a microwave safe bowl in 20-30 second intervals, stirring in between, until chocolate is fully melted

5. Pour three quarters of chocolate mixture over oats. Add remaining oats and press down firmly. Drizzle with remaining melted chocolate/peanut better

6. Refrigerate until firm (about two hours) then cut into approximately 2 inch bars. Store bars in air tight container in the fridge or freezer


Makes 18 bars
